I used this in my pineapple upside down cake and it was such a hit! I have never eaten cake batter by the spoonful before! I figured 1/3 teaspoon is equal to 1/4 cup of actual coconut rum. All the flavor and I didn't have to go to the store to buy alcohol: Wonderful! I am trying to think of other baked goods I can put it in, like an extract : )
So, I have a bunch of recipes (baking and stovetop) that call for rum, but I have small children that will eat it. I read in a child care magazine that not all the alcohol cooks out it is in fact a half-life situation (not to mention if they get a hold of it). Anyway, rum is pretty high on the life side. But some of these recipes are really good! And I wanted to win my kids over to eating all their dinner for a reward. So I used this instead, and I can't tell the difference Rum cake and chocolate fondue abound!

Great for coconut ice cream. I also used it in a coconut cream sauce, yummy!
