My first order never made it to me BUT the seller immediately sent me another. This Guanciale is a good as I have bought in Firenze! Just cooked my first patch. It is fabulous!!! Finally I can prepare some favorite recipes. Thank you so so much!!!

UNFORTUNATELY PORK AND FLORIDA WEATHER FOR TRAVELLING DOES NOT MIX. WHEN I PICKED IT UP ON THE DOORSTEP, IT HAD BEEN IN A VERY HOT TRUCK ALL DAY! I TOOK IT OUT OF THE PACKAGE AND IT WAS EXTREMELY HOT. I FRIDGED STRAIGHT AWAY AND I AM HOPING FOR THE BEST. IT WILL BE HARD TO REORDER DURING THE SUMMER MONTHS UNLESS IT IS SHIPPED OVERNIGHT. THE COST AT $24 FOR 12OZ IS VERY HIGH. YOU CAN BUY IT FROM IGOURMET FOR JUST UNDER $10

I use the guanciale to prepare the sauce for some bucatini alla amatriciana. It is very easy to prepare and taste very good! Will buy more...

We recently returned from Italy and Rigatoni Greci was one of our favorite pasta dishes. I tried to recreate the recipe but unable to do so with pancetta. Guanciale is no where to be found in West Palm Florida, so I ordered this thru Amazon.

Description

Guanciale is the fatty cut from the sides of the pig's head called jowl. Though many consider it interchangeable with belly meat, the jowl has unique qualities that make it as suitable eaten thin sliced and out of hand, as well as used to start a pan sauce or soup. Because the pig is chewing all day long, the muscle is worked more than the belly. This means that it has more active fibers, giving it lots more flavor. Due to the berkshire's ability to store fat with its lean muscle, the guanciale will melt in your mouth if eaten out of hand. For the same reason it is superior to any pancetta in rendering for a dish because the fat within those meat fibers, not found in belly meat, will also break down. In the finished dish, this means there will be fewer hard, dessicated lean bits of meat. Instead, each taste of guanciale will yield to the chew, and again release more flavor with every bite. That is why guanciale is the preferred salumi for use in dishes like pasta all' amatriciana, carbonara, and gricia. Used with fresh pasta & turned out really good. Different flavor than pancetta. Would buy again, had a a nice smoky taste.

So yummy!!! Was introduced to this at my Italian cooking glass in Rome last month (Carbonara anyone?) Until I can find it local I'll be ordering this..soooo worth it. It's like bacon but better

The best ever. Would have ordered sooner had I known it was so delicious. Gave one to my 20 yr old Nephew who started eating this at a very young age wit his Italian Parents

After reading about the earthquake in central Italy in August I learned that Amatrice was famous for it's sauce, I was interested. After eating Bucatini all"Amatricana in a fine Italian restaurant in NYC I knew I would have to make it. So I went on line and found the recipe, it looked like a no-brainer but I didn't know where to get guanciale. Amazon came through again, the meal was just the best.

Bellissimo!!!!!!!!! Made Spaghetti All'Amatriciana and it was fantastic. The guanciale is ABSOLUTELY the star of this dish. If you use pancetta or bacon you haven't experienced the beauty of this dish.
