
I like to take fresh grape or apple juice and let it sit in a 2-liter soda bottle for a day or two at room temperature. The natural yeasts will carbonate the juice and give it a very slight fermented flavor. The alcohol content will be negligible but the fizziness and flavor are just awesome. Unfortunately when I bottle my grape juice all of the natural yeasts are destroyed by the high temperatures. That's where this Red Star yeast comes in. I dilute my bottled juice to the proper sweetness and add 1/8 tsp of this yeast. Within about a day the bottle becomes nice and hard meaning its well carbonated. The stuff tastes amazing. I do the same thing with store bought apple juice (no preservatives, since they will kill the yeast). I do add about 1/4 cup of sugar per 2 liters of juice in order to offset the sugar consumed by the yeast. I had tried bread yeast with this method but the flavor was too strong and detracted from the final product. This wine yeast has a very mild flavor and works great with both grape and apple juices.
A very mild wine yeast, This is not a bad thing by any means and worked for what I wanted. I came across about 15 pounds of mixed berries this winter and decided to make a triple berry wine, I wanted to keep a lot of the berry flavor and so I needed a mild yeast in order to do that. This yeast will not ferment nearly as long as a lot of other yeast and is pretty temperamental with temperature also. 5 gallons of berry wine fermented for about a month and a half and came out with a low alcohol content to my normal batches with my favorite yeast "Pastuer" but like I said it did what I wanted.
I do recommend this yeast it is quick to start but also quick to stop which is perfect if you need a delicate touch.
I got the wrong yeast in my order, but I bought the same ones locally, so I'm reviewing the same product. It ferments out a bit tart, keeps a lot of fruit flavor, and doesn't come out as dry as you might expect. Final gravity is consistently 1.000 (unlike other wine yeasts that always bring it below 1.)
I like it, my wife doesn't. I'd say, try one and see if it's for you.
This yeast had no problem getting going very strongly when I sprinkled even a partial packet in a gallon of must. I've used a few packets, and I've got plenty of packets in the fridge waiting to go. I didn't know how yeast would do coming from an Amazon warehouse and being shipped in warm weather, but I had it shipped to Texas in April with no ill effects. It's working great.
Used this for a Gewurtztraminer and was really pleased with the results. I normally use another brand of yeast, but could not find exactly what I wanted. This fermented completely dry in 9 days at 66-68 degrees and left the typical Gewurtz flavor and aroma.

Used on two 5 gallon batches of blush wine. I was uncertain how well this would work on purple grapes. No need to worry. The fermentation was vigorous and converted all sugar in about 7 days.
Nice fresh yeast. This brand has always performed exceptionally, and we have never had a dud. It doesn't impart harsh yeasty flavors to your fermentables. We have used this for wine and mead, holds up to higher alcohol, we don't even prime it, we just pitch and the airlocks are bubbling merrily away in a few hours.
It has successfully made 3 5 gallon ciders and so far has produced ciders up to 9.5%. I imagine I could go even higher, but for what I make the 9.5% was already higher than desired. Looking forward to the next 7 batches and experimenting more!
A wonderful yeast for making delicious and strong hard cider. Feed your yeast good, use raw sugar. Add yeast at room temp.
Started 4 batches of mead with this yeast. 1st batch is decanted and appears to be a success. The middle 2 are working still and the most recent batch is idle for some reason. It could be leaking gasket at the vapor lock but will not know until I decant. As for shipping, condition, use on date, all were excellent.
