
Like other reviewers said, this stuff ferments fast and furious. 48 hours after pitching into 5 gallons (no starter) the airlock was bubbling every second. After 10 days it hit 1.002 and I bottled it with 5oz priming sugar. Very clean, bright finish that lets the grain flavor shine. I brewed with Hallertau hops which also are fairly mild flavored (compared to American hops) and let the grain flavor stay on top. I got nothing but complements on this brew. Next time I will add half a cup of sugar near the end of boil to get a higher ABV - this yeast will have no problem with the extra sugar.
A friend made a similar saison using White Labs yeast - his tasted much more funky. Check that brand out if you want funk. If you want bright and crisp, the Lallemand is the way to go.
I used this yeast to make a hard cider and it worked beautifully. The yeast packet arrived with much of the writing rubbed off but was still under vacuum so I assumed the yeast was ok. After direct pitching into the carboy, it started bubbling away at about the 18 hour mark and went steady until completion. Very happy with the final product.
This yeast makes excellent saisons. With a primary fermentation temperature in the high 70's, up to 80 degrees, the yeast produces lovely esters and mild tartness. Don't pitch in the 70's, or you will get lots of phenols. Pitch in the 60's and let the temperature rise over the first 24 hours. I would have to compare it to other available saison yeast strains before I could rate this one 5 stars. It also plays nicely with Brettanomyces, allowing fairly rapid development of Brett flavors during bottle conditioning. It does have the significant convenience of being in a powdered form. I have also experienced excellent customer service from Lallemand when I have emailed them with technical questions about their products.
I've made several five gallon batches of beer using this yeast and have had nothing but great results. Obviously this isn't appropriate for all styles of beer, but it's my favorite saison yeast by far.
Great for apple cider. Slow to ferment at 70 degrees.

Belle saison is a Belgian ale yeast strain perfect for making saison-style beer. It has a quick start, and a very vigorous fermentation. In fact, fermentation can complete in as little as 5 days under optimal circumstances. As with many Belgian strains flocculation is low, and the finished product will often be cloudy. If you desire a clearer product cold crashing or fining agents such as isinglass can be used in secondary fermentation.

This yeas makes some of the best hard apple cider you could ever want. A very aggressive yeast that leaves some of the best flavors imaginable.
