Diamond Crystal Kosher Salt, 3 lbs

This is, according to many chefs, is the salt to have. If you are accustomed to Morton’s Kosher Salt, keep in mind that this is about half as salty. It will take some experimentation to get your quantities right to your palate if you have been using a more powerful salt. And you may visually have to adjust how much salt you are adding. I found myself wincing at the 1/4 cup needed in my pasta water and was serving under-salted foods for awhile until I learned the right quanties needed to achieve the flavor I wanted.

Diamond Crystal kosher salt is the only salt both recommended and used in my favorite cookbook, The Complete America's Test Kitchen TV Show Cookbook 2001 - 2019: Every Recipe from the Hit TV Show with Product Ratings and a Look Behind the Scenes. Using Diamond Crystal kosher salt makes the listed seasoning amounts in the cookbook’s recipes very exact. When I used Morton or Alessi kosher salt, I needed to reduce the amounts listed by thirty-three percent. When I used table salt, I needed to reduce the amounts listed by half.

Here’s how those salts measure up:
1 teaspoon table salt = 1½ teaspoons Morton kosher salt or Alessi coarse kosher salt = 2 teaspoons Diamond Crystal kosher salt (in the red box; not finely cut)

The sodium content of Diamond Crystal Kosher Salt is ¼ teaspoon (0.7 grams) equals 280mg of Sodium.

When Publix stopped selling Diamond Crystal kosher salt, I purchased Alessi kosher salt and Morton kosher salt as a substitute. I ended up over salting the meals because I was accustomed to the taste and feel of cooking with Diamond Crystal kosher salt. As a result, I purchased this three pound box to refill my user-friendly leftover cylindrical shaker container that I bought previously at Publix.

Although I use Diamond Crystal kosher salt for almost all my seasoning needs, I still keep plenty of iodine-free table salt on hand for salting pasta water, brining beans, and baking. The table salt’s finer texture is better for those needs, and table salt is also cheaper to buy. For my homemade nutrient-rich bone broth, I use B01EX4UOWM Light Grey Celtic coarse sea salt, 1 lb. bag- Pack of 2 which is high in minerals that our body needs and is also Kosher Certified. Light Grey Celtic coarse sea salt is best dissolved in broths and soups because it is naturally too moist to evenly sprinkle as a finishing salt.

The only ingredient in Diamond Crystal kosher salt is salt. There are no anti-caking agents and no chemically-tasting iodine. As a result, Diamond Crystal kosher salt needs to be stored in a dry cabinet away from moisture. If sprinkling over steaming hot food, it is best to pour the salt into a measuring spoon and then sprinkle the salt over the steaming food because if you sprinkle directly from the container or shaker onto the steaming food, the salt will absorb moisture and cake/clump inside the container. I found this out the hard way.

Recently, our household ran out of salt. When I attempted to purchase a replacement, I found that most of the salts that I looked at contained caking agents. Due to household allergies, we wanted to avoid caking agents, and the only salt I could find without one was Diamond Crystal Kosher Salt. I'm glad I found it!

Diamond Crystal Kosher Salt comes in a large 3 pound box that will last our household a long time. I wish the box was resealable, but since it isn't, we dumped the salt into a canister to keep out potential critters which only seem to pop up when there is unprotected sugar, flour, or salt.

This salt is larger in size than traditional table salt. While traditional table salt is tiny grains of salt that you can barely see, this is more like flakes of salt that are highly visible on your food when you sprinkle it on. The flakes are large enough that they can be seen, but small enough that you do not have to grind this salt in order to use it.

Taste wise, I was skeptical about switching to a kosher salt, I had no idea what to expect. As it turns out, it tastes like salt, just like it should. It is however less salty than traditional table salt, so I find myself using 2-3 times more salt with each use than I would use if I were using regular table salt.

The less salty taste was most noticeable when baking. I love to make baked goods and most of my recipes call for 1 teaspoon of salt. I now need to use 2-3 teaspoons of salt to get the same flavor results. When I double the salt, the taste of the recipe is the same, which is a good thing. Ingredient wise, this salt contains one ingredient: SALT!

I would definitely buy this salt again in the future as it's the only salt I've come across that does not contain a caking agent.

I've had people tell me about what salt is good and bad for you. Everyone has an opinion. This salt brings out flavor and has minimal salty flavor. I would usually recommend just salting your food after it has been cooked by someone who doesn't agree with salt being good for you. I don't use table now that I've discovered this product. I'm sure I can get my iodine from somewhere. Diamond Crystal Kosher salt adds flavor without the salty taste it is so incredible. I have tried Hawaiian, Himalayan Pink Salt, Kosher, table, and every other variety people have recommended. Just try this on meat or a pasta, you will see the difference.

This kosher salt is the one Alton Brown uses, so I had to check it out. I don't buy anything else, as larger grain salt just falls off food that you sprinkle it on. Diamond Crystal clings onto food and tastes great. Won't go back to table salt again!

Large size and will last along time. The taste is amazing. Its nothing like morton. If you want to take some real salt this Diamond crystal kosher is a great start in salts. I use it in all my cooking. I also bought a salt box and the two together are time savers and the food is much better tasting.

Anyone reading this has probably noticed that the canisters of Diamond Crystal Kosher Salt disappeared from grocery stores in 2018. Cargill, owners of Diamond Crystal, discontinued six Diamond Crystal consumer products, including the Kosher Salt canisters. That's bad, as most recipes in the United States are standardized for Diamond Crystal kosher salt. Morton's kosher salt granules are smaller so you need to use about half as much. There is an article on Serious Eats entitled "Do I Need to Use Kosher Salt?" that gives exact comparisons by weight.

I use kosher salt because measurements in recipes are standardized for it, specifically for Diamond Crystal. Also, I dislike the taste of iodized salt and the tiny granules of table salt are difficult to see and therefore lead to over-salting. I actually prefer the taste of sea salt, which is a little minerally. I like Morton Fine Sea Salt, but I use kosher salt in cooking. Now I am compelled to buy a 3-pound box of Diamond Crystal. I poured it into a Tupperware container that I can scoop out of easily. I put some in an empty spice jar with a shaker top. That works well for light seasoning.

I actually prefer this over Morton's because it seems to be a little finer, so it is easy to spread with a three finger pinch. As far as taste...it's salt. The main reason this is popular in the culinary world is that it is easy to control so you don't over salt. It is also typically used by spreading with your fingers, so you can measure by feel. Also, no funky iodine hint.

My only complaint is that the opening used to poor out the salt is literally a torn out hole. I was used to the metal hinge that easily opens and allows me to poor with ease. This container isnt even scored for the opening, I had to cut it open which is a mangled mess. Otherwise, the salt product is great.

Diamond Crystal Kosher Salt is the only salt I will use. Perfect size flakes, which blend instantly with a delicious, yet not over-whelming strength and no metallic aftertaste. But the MAIN reason to use this salt is what it is NOT: potassium iodide, sodium iodide, sodium iodate, sodium aluminosilicate, sodium ferrocyanide. Now, to be fair, not all table salt contains the aforementioned additives, but you can be sure that Diamond Crystal Kosher Salt doesn't.
