I used to like Hickory Farms...A LOT. Then, I guess the folks at Hickory Farms decided that cheaper ingredients and quality control cuts were more important, at least that's what it tastes like to me, and after many years of Hickory Farms sausage bliss, it twern't so blissful. So, after years of tastyness I have not purchased, nor would I even consider Hickory Farms as and option any more.
Then one day, I was looking for summer sausage and found Old Wisconsin and am very pleased with the product. It's not the best, but beats the "new" Hickory Farms by a mile. The absolute best Summer Sausage I've ever tried was some that a friend brought me back from a shop on the Navy Pier in Chicago. That stuff didn't last an hour, and I'm kinda glad I don't remember what it was because could turn out to be absolutely addictive.
I continue to order a stick of Old Wisconsin every once in a while, in fact I just got a new stick yesterday and think I'll just have me some. Wish I could remember the name of that place in Chicago.....anyone???
This all beef summer sausage actually surprised me! I used to dearly love the original Hickory Farms Beef Stick. Back a number of years ago, Hickory Farms changed their recipe from the Beef Stick to the Hickory Farms Beef Summer Sausage. Sadly, they totally ruined it with too much fat and fillers and a big change with the spices and flavor! So, I have been looking for a replacement beef sausage ever since.
This Beef Old Wisconsin Summer Sausage is pretty close to the flavor of the good ole Hickory Farms Original Beef Stick! This sausage is also lot less fatty and greasy than the newer Hickory Farms Summer Sausage.
The texture of this sausage is a bit on the mushy side, but after being in the fridge for a few hours, that helps firm it up some. The diameter of this sausage is about 2 inches and the sausage is about 11 inches long. It is decent a size for the price and it is All Beef! I will finish eating this one, (much to the dismay of my dogs), and I will be buying more.
Non-greasy, great flavor quality product. I reorder often. Would buy in stores cheaper but can only find this locally during the year end holidays. I prefer the original a little better just because original is more tender (that's why only 4 stars).
Thin slice of this on a cracker with a good cheese and some jalapeno pepper jelly (or sweet mustard) is a great for guests or a late night snack.
I've tasted lots of summer sausage from quite a few different companies. Old Wisconsin is without a doubt one of the best around. No overpowering spices but a really nice mild flavor. I just wish they carried a kippered variety. So I did the next best thing. I ordered 2 beef sausages and peeled one down to the meat and placed it in a wax paper lined pan. I then heavily covered the entire sausage with course, cracked black pepper and rolled it tightly in the waxed paper to drive the pepper into the surface of the sausage. I then stored it in saran wrap. If you like pepper you can't beat the flavor of Old Wisconsin done this way. If not, just the way it is is tops! I will be ordering 2 more soon as this summer sausage does not last long in my house.
This was one of the very best summer sausages we have ever eaten!! What I liked about it was that it wasn't greasy, like so many summer sausages are. There is plenty of fat in it, but it wasn't greasy and didn't cause any stomach upset. The flavor was perfect and very good. I will DEFINITELY buy this again, because we ate it all already. I highly recommend it.

Some other sausage has way too much preservative and weird salts in it.

This is the best beef salami I've ever had: taste, texture - excellent! It also keeps for a long time, in a refrigerator, so when my supply is about to be exhausted I'll be ordering three months' worth.
very good sausage, tasty, not too greasy! lasted a long time -- just a note on ordering, one fellow ordered it in the heat of summer, and it came a bit smelly, and I ordered it in the dead of winter, and I think the freezing and refreezing it underwent in the mail trucks did something to it. But it was good and lasted about six months of careful re-wrapping, and refrigerating. I cooked it mostly toward the end to ensure its safety. Anyway, it was good!
This is awesome summer sausage. I can't eat pork and all beef summer sausage is expensive and not always easy to find, so I was glad to see this. I went back and bought more and will buy more in the future. It tastes great, not greasy at all.
These are as close as you are going to get to the old Hickory Farms beef sticks. Close enough I can't tell the difference and when you first open the package you get that flashback to an earlier time and you know the formula is just that good. Took quite a few years to even find these after you try the new Hickory Farms beef stick or whatever it is and you want the real deal again.
